BBQ Pulled Pork Cups is Branden’s (who are we kidding, all of ours) FAVORITE finger food that I make for game night! We have these BBQ Pulled Pork Cups often for dinner, but it is such a delicious and simple recipe that I started making for game nights with friends as well.
With simple ingredients, most of which are pre-made, this recipe comes together quickly and tastes more elaborate than it is! My favorite thing about these BBQ Pulled Pork Cups is that they are very versatile! Can’t find pulled pork in the store? No worries, sub shredded chicken, or ground beef! Someone in the party doesn’t like cheese? Leave it off! It’s really that easy.
Ingredients for BBQ Pulled Pork Cups
All you need is FOUR ingredients!!
1. Biscuits
Grab your favorite pre-made biscuits. Pop the can open and cut each biscuit in half lengthwise to create two flat circles from one biscuit. If you’re using a standard muffin tray, you will only need six biscuits to make twelve cups. If you are cooking for a crowd, I recommend grabbing two cans of biscuits and either using two standard muffin trays or making a double batch by baking them in advance and reheating in the oven.
2. Pre-Made Pulled Pork
During the summer we are lucky enough to have homemade pulled pork smoked by our Father, but when we don’t have that on hand, Costco sells a really delicious and affordable pre cooked option! We always have a pack of this salty deliciousness in either the fridge or freezer for quick meals. It comes with 2lbs of shredded pork so be prepared to freeze the extras! Or make these Pulled Pork Cups every night for dinner for a good week haha!
3. BBQ Sauce
A pantry staple in our home. Pick your favorite brand to slather on that delicious pork! We usually pick a spicy variety. Use as much or as little as you like, just remember that not everyone is a huge BBQ sauce fan. When making for new guests we like to err on the side of caution and lightly sauce the pork, guests can always add more later!
4. Shredded Cheese
To cheese? Or not to cheese? That is always the question in our house! Some us in our group are sensitive to dairy. To ensure everyone is happy we usually make half cheese and half without. We have found that both Mozzarella and Cheddar cheese taste great, but feel free to use your favorite or whatever you have on hand.
5. Pickles for Serving (optional)
This is an optional after cooking topping, but if you like pickles, you NEED to top these with them! We love the giant jar of Famous Dave’s pickles that we find at Costco. They’re the perfect combo of sweet and spicy for our palette, but again, use your favorite!
Substitutions:
If you can’t find pulled pork, or you don’t like pork, shredded chicken is an easy and yummy sub! We have also used ground beef and I’m sure any ground meat would taste great. Just be sure to fully cook the ground meat before adding to the biscuits.
How to Make BBQ Pulled Pork Cups
- Pop open the biscuits and remove 6 from the container
- Cut each biscuit in half lengthwise so that you have 12 flat biscuits circles
- Spray muffin baking tray with nonstick spray
- Push 1 cut biscuit into each well of the muffin tray
- Finely cut up about 2 cups of pulled pork (or meat of choice)
- Combine cut Pork and BBQ sauce to taste in a mixing bowl
- Using your hands, or a spoon, divide pork into each of the 12 wells
- Top with cheese if desired
- Bake according to biscuit instructions or until the biscuits are lightly browned
- Serve with extra BBQ sauce, pickles and assorted snacks before gaming begins!
